Service Description
Level 2 – Intermediate Chocolate Bonbon Class In the Beginners Chocolate Making Class the Chocolatiers have learned basic techniques and found out that working with Chocolate is a lot of fun! In this course, chocolatiers will build on the foundations from Level 1 and learn how to design and produce high-quality filled bonbons with professional techniques. As a team we will be creating a Luxurious Chocolate Bonbon selection consisting of 6 different flavours with 6 different decoration techniques Participants will learn: Advanced Mould Decoration Working with multiple cocoa butter decoration techniques Spraying coloured cocoa butter using an airbrush Creating texture effects by blowing colour in moulds Using stencils and Russian nozzles for patterned decoration Creating and stamping mould designs with heated stamps Chocolate Tempering at Home The microwave / seeding tempering method demonstration How to achieve stable, glossy chocolate suitable for moulding at home Ganache & Filling Development Understanding ganache structure and ratios Cooking caramel and incorporating it into ganache Building balanced flavour profiles for bonbon fillings Controlling texture and shelf stability As a team we will be creating 6 luxurious ganache fillings Perfect Shell Formation Casting moulds correctly Achieving thin, even shells Avoiding common shell defects And of course there will be a nice Lunch break and a Game or two to play while we are waiting for things to set. Chocolate pairing Lab Learn about principles of how to create delicious flavour combinations and how development chefs think. Create your own delicious ideas and match them with your favourite chocolate Smell and Tell Level 2 This was great fun that got everyone’s senses fired up. Get ready for more challenging chocolate related smells Chocolate tasting This time we will explore 5 Luxurious Valrhona chocolates crafted from the renowned Trinitario, Criollo and Nacional Cacao Beans celebrated for their exceptional flavour and heritage. Any participants that have completed the Level 1 Beginners Class, may participate on the Level 2 for a reduced rate of £95 using their unique code. These codes may only be used by those who have completed level 1.

Ruxstons Chocolate Making Classes – Terms & Conditions Please read these terms & conditions carefully before booking any of our chocolate making classes or experiences. By purchasing a place, you (“the client(s)”) agree to a binding contract based on these terms. If you have any questions, please contact us before booking. 1. Agreement An agreement is formed once a booking has been made and payment received in full. Ruxstons reserves the right, at its sole discretion, to refuse any booking. In such cases, no agreement arises and any payment received will be returned. This agreement is between Ruxstons and the client(s) only. No variation of these terms applies unless agreed in writing by Ruxstons. The agreement is governed by English law. 2. Payment All classes must be paid for in full at the time of booking. 3. Arriving Late Our classes start promptly. We reserve the right to refuse entry to anyone arriving late, and no refund will be given. Please contact us as soon as possible if you are running late. 4. Personal Possessions We recommend you do not bring items of high value. Ruxstons accepts no responsibility for loss of, or damage to, personal belongings. 5. Right to Refuse Entry We reserve the right to refuse entry to a class or event. By agreeing to these terms, you also agree to the following: Age restrictions may apply and will be stated clearly at the time of booking. Ruxstons accepts no responsibility outside the premises. We offer no car parking and cars parked elsewhere are at the owner’s risk. Dogs are not permitted on site. Ruxstons is not liable for failure to provide services in circumstances beyond our reasonable control (e.g. power cuts, industrial action, fire, flooding, or other force majeure events). 6. Behaviour We reserve the right to ask any attendee to leave if, in our reasonable opinion, their behaviour is unacceptable. 7. Valid Bookings Only Bookings are only valid if made through our official channels (e.g. Ruxstons’ website or directly in-store). Any resale or attempted resale of a place will void the booking. 8. Cancellation by Ruxstons We may cancel a class due to circumstances outside our control. In such cases we may reschedule, offer a suitable alternative, or refund you in full. We are not responsible for any additional costs you may have incurred (such as travel or accommodation). 9. Cancellation by Client You may cancel your booking up to 4 weeks before the class.
