Lamb Racks are a cut from the most tender and prime part of the loin with the ribs still in. They can be cooked with a variety of spices and herbs for different continental styles, a firm favourite here is cooking them with mustard. The racks can be cooked on BBQ or in an oven, however you choose to cook them you will be in for a treat. The perfect roast is achieved when the ribs can be pulled out of the rack with minimal effort.
This is one of the most flavourful pieces of lamb and is a great option for when friends or family are around as this is not something you will have every day. It is our most popular lamb cut by a long way and it is not hard to see why.
As our lamb is 100% grass fed, they cannot be sped up by feeding cereals or soya to the lambs, and this means they are not ready until they are 9-12 months old as opposed to a lot of commercial lamb which can be ready in as little as 5 months. This is one of the main factors for the improved taste.

We will always choose the weight from our stock closest to your choice as possible. However please allow a small ±50g tolerance for your selection.
After hanging for a minimum of 5 days, this lamb is butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at it's most fresh. Freezing also eliminates any food waste.
