Tagliatelle itself has a long history, originating in the Emilia-Romagna region of Italy. Legend has it that the pasta was inspired by the flowing golden hair of Lucrezia Borgia, created by a chef in her honour. Whether or not that’s true, one thing’s certain—this mushroom-infused version is a delicious twist on a timeless classic.
