These Dark Chocolate lemon claws are quite something. Typically it is easier to paint a colour then paint white cocoa butter over it before putting dark chocolate down otherwise the colour is hard to see, however yellow was a safe bet to show on the dark chocolate so we gave it a go, the result? A seemingly rather disturbing radioactive looking claw mark! Not quite what Ruxstons traditionally goes for but they do look rather cool so we kept them in.
 
The lemon fondant is something that really goes well with the dark chocolate, a flavour needs to be big to not be completely dominated by our strong dark chocolate but lemon is something that can truly do that.
