Biona’s Wholegrain Spelt Pasta is made from an ancient variety of wheat known for its pleasantly nutty flavour and a gluten structure that many find easier to digest. Spelt pasta generally cooks more quickly than regular wheat pasta, so it’s important to keep a close eye on cooking times to achieve the perfect al dente texture. Its more delicate gluten can break down if overcooked, making a gentle boil and frequent testing the key to success. Don't walk out of the room for five minutes because you can come back and it be very soft!

 

As a wholemeal pasta, it retains the bran and germ of the spelt grain, resulting in a higher fibre content, along with elevated levels of essential vitamins and minerals. This contributes to a deeper taste and a darker appearance than its white spelt counterpart, which undergoes a refining process to remove the outer layers. In turn, white spelt pasta has a lighter colour and subtler flavour profile, but also fewer nutrients.
