A finely milled strong white wheat flour created for making pasta and pizza bases. Its protein level allows good gluten development which gives dough the elasticity needed for shaping. In traditional Italian cooking, high-gluten flour is favoured because it produces a firm bite when boiled and a chewy structure when baked.
