Ras El Hanout is a Moroccan spice blend whose name translates as “top of the shop” because merchants often used their finest spices to make it. Recipes vary widely but usually contain a mix of warming and aromatic ingredients such as coriander, cinnamon and turmeric. It has long been used in tagines, couscous and lamb dishes.
