Capote Capers, the largest of all capers, are harvested from the unopened flower buds of the caper shrub (Capparis spinosa). The buds are kept in brine to preserve them, and end up with their distinctive tangy, salty flavour. Their large size means they are ideal when used in a garnish. Capers actually contain the same mustard oil glucosides that give them their sharp character, the plant thrives in rocky mediterranean soils and have been used since ancient times.
