Diced mutton is by far our most popular mutton product. It comes from the shoulder or leg of a mature sheep, where the meat has developed a firm texture and rich structure over time. The extra age means more connective tissue, which might sound tough at first, but with slow cooking this breaks down into natural gelatin, giving the sauce body and depth. That’s exactly why diced mutton is perfect for long, gentle simmering.

 

A classic mutton curry is still one of the best ways to use it. The strong spice blends that might overpower lamb are perfectly balanced by mutton’s deeper flavour and natural richness. The fibres absorb spice beautifully, and the longer it cooks, the softer and more rewarding the result. We will always choose the weight from our stock closest to your choice as possible. However please allow a small ±50g tolerance for your selection.

 

After hanging for a minimum of 5 days, this mutton is butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at its most fresh. Freezing also eliminates any food waste.

All our products are posted via Next Day courier from Monday through to Thursday. Any orders placed before 12:00 will normally be posted that same day.

 

We offer a frozen product delivery for our meats, with insulative woolcool and ice packs, our parcels are sent via Next Day courier. The parcels are all tracked so you are able to be present for the delivery, we dispatch from Mondays to Thursdays to avoid weekend delays. Any perishables products are kept safe in our packaging during a delay of up to 1 day, meaning they are safe for 2 days in the postal system.
