This salsa pairs tomatillo and mango with habanero chilli, one of the hotter chillies commonly grown in Mexico. Tomatillos are related to the tomato but have a tangier character and are widely used in salsas verdes. The blend is balanced with vinegar, onion, garlic, coriander and a little corn starch for texture.
