Mutton chops make a brilliant choice for a dinner party or special occasion. Mutton chops come from the loin or rib of an older sheep, which means the muscle has had more time to develop. This gives the meat a denser texture and a deeper flavour compared to lamb. Because the fibres are more mature, mutton is usually slow cooked to relax them, but chops are an exception because they are naturally tender. With the right cooking method they stay tender and rewarding to work with. We tend to roast them with spices, though they can also be pan cooked if treated with care, marinating them overnight in the fridge really helps if you are to pan fry them.
Few cuts show the difference between lamb and mutton quite as clearly as these do. Sometimes it pays to be bold in your choices, and this is certainly bolder than lamb chops. Make this meal one to remember!

After hanging for a minimum of 5 days, this mutton is butchered, then vacuum packed and frozen, perfectly preserving the best taste and quality at its most fresh. Freezing also eliminates any food waste.
