Our pork shoulder comes from slow-grown, pasture-raised pigs, giving each cut a higher level of intramuscular fat that translates into unbeatable tenderness and deep, robust flavour. Unlike leg, which is leaner, shoulder carries more marbling, making it the ideal choice for both long braises and pulled pork, particularly when you’re cooking pork shoulder in a slow cooker.
These pigs roam freely and have a diet heavily from the natural pasture, their meat develops a full-bodied sweetness and depth of flavour that intensively farmed pork can’t match. The extra marbling in a pasture-raised, slow cooked pork shoulder delivers incredible taste and tenderness, making it the ultimate choice for pulled pork.

We will always choose the weight from our stock closest to your choice as possible. However please allow a small ±100g tolerance for your selection.
The pork is hung for 9-10 days to develop flavour, it is then butchered, vacuum packed and frozen, perfectly preserving the best taste and quality at it's most fresh. Freezing also eliminates any food waste.
