A sesame seed spread made from unhulled sesame seeds that are stoneground to create a darker, more robust paste. Using the whole seed means the fibre content is higher compared to light tahini, while still being naturally rich in protein and minerals such as magnesium and calcium. Traditionally used in Middle Eastern cooking, tahini is one of the oldest known seed pastes.
