In Focus: Chocolate Caramel Bear Gift Boxes

Since we launched our chocolate factory in the summer of 2025 one chocolate was popular from day one, it was the milk chocolate caramel bear. Seeing the molds in the catalogue when we were designing the new range of chocolates, I knew the bears would be a great hit, they are fun, I mean who doesn’t love a bear, let alone one covered in chocolate and full of caramel!

Making Chocolate Caramel Bears


Making chocolate bears presents a unique challenge. Because the mould contains a lot of detail, the risk of air bubbles is much higher. The reason for this is simple: when chocolate is poured into the mould, the thicker it is, the harder it becomes for trapped air to escape through the chocolate.


As a result, you want the chocolate to be as warm as possible whilst still remaining within the acceptable working range for milk chocolate. For us, this is around 34°C. At this temperature, the chocolate is thin enough for the air bubbles to escape whilst the mould is on the vibrating table. The process is the same for milk, white, and dark chocolate bears.


Once the chocolate is in the mould and has spent around 20 seconds on the vibrating table, the air bubbles should have escaped. You then flip the mould upside down and pour the chocolate back out. It sounds counterintuitive, but roughly 20% of the chocolate remains attached to the inside of the mould, creating the chocolate shell.


Once the shells have set, you can pipe in the caramel. Again, you want the caramel warm enough to settle flat rather than sitting in a mound, but not so hot that it melts the shell. After around 30 minutes, the bears can then be topped and sealed. You now have a caramel chocolate bear.


Milk, White or Dark Chocolate Caramel Bears?


If you have a sweet tooth, then our white chocolate caramel bears are the ones for you. The sweetness of the white chocolate combined with the caramel really takes things up a notch and, whilst your dentist may not approve, they make a perfectly acceptable treat now and then.

The milk chocolate caramel bears are the classic option, and my personal favourite. They are not quite as sweet as the white chocolate version but feel more traditional than the more sophisticated dark chocolate caramel bears. If you prefer more contrast in sweetness, then I would recommend the dark chocolate caramel bear. The stronger dark chocolate works beautifully with the thick caramel encased within it.
