Green peppercorns are the unripe berries of the Piper nigrum plant, the same species that gives us black and white pepper. Harvested early and these are preserved in lightly salted water to retain their fresh green colour, they contain the compound piperine, which contributes to their sharp, aromatic character. Unlike black peppercorns, which are dried and oxidised, green peppercorns are milder and more herbaceous, making them popular in sauces and pickling. The pepper plant is a climbing vine that can grow up to 10 metres tall and has been cultivated for over 2,000 years, once traded as currency in ancient markets.
