Penne originates from southern Italy. It is a tube-shaped pasta with angled ends. This version is made from peas with a mild flavour and green colour, it can be slightly firmer than other gluten free pasta such as red lentil or corn but still softer than wheat.
Overcooking will make it go soft but unlike an oat pasta it will not actively fall apart, as a result if you are just switching to a gluten free pasta then this may eb the easiest to start with initially.
