Mini silverskin onions are young, white onions harvested very early and preserved whole in vinegar which maintains their crisp texture and bright appearance. Their small size and smooth skin come from being picked before full maturity, which also keeps their flavour mild and their structure firm. These onions belong to the Allium family, alongside garlic and leeks, and contain sulfur compounds that contribute to their distinctive aroma and minor antimicrobial properties. Silverskin onions were a staple in Victorian pickling traditions and are still popular in cocktail garnishes, especially in a classic Gibson martini.
