Organic pappardelle is a wide ribbon pasta from Tuscany. It is much broader and thicker than tagliatelle, with a rich texture from the egg. It works best with stronger sauces whilst adding our grass fed beef mince. Organic Mushroom Pappardelle is also a popular option, just fry up some mushrooms, we particularly like shiitake, and make a heavy sauce to go with it. Mushroom Pappardelle is a winter dish and certainly will fill you up on a cold day.

Pasta d’alba is an organic pasta company founded by the Mainardi family in the hills around Alba, Italy. Alba is a region famous for its truffles, hazelnuts and has a long history of artisan, small-scale food production. The Mainardi family has been farming organically here since the 1980's, long before it was fashionable. The business is now run by three siblings, Luisa, Marco and Laura, who have kept the artisan, hands-on approach while letting modern machinery take care of the repetitive bits.
