Tagliolini pasta is from northern Italy, originating in Piedmont. It is thin, flat (this is how it differs from spaghetti) and delicate. It works best with light sauces so not to overpower the pasta, so no thick heavy tomato sauces and just focus on light mushroom or seafood sauces. It pairs well with our meats, particularly chicken. The key, which we can’t stress enough, is not to drown this pasta in sauce.

Pasta d’alba is an organic pasta company founded by the Mainardi family in the hills around Alba, Italy. Alba is a region famous for its truffles, hazelnuts and has a long history of artisan, small-scale food production. The Mainardi family has been farming organically here since the 1980's, long before it was fashionable. The business is now run by three siblings, Luisa, Marco and Laura, who have kept the artisan, hands-on approach while letting modern machinery take care of the repetitive bits.
