Tagliatelle is a northern Italian pasta, it is wider and thicker than tagliolini from the same region. This spinach version has a natural green colour and with that comes a mild and earth like flavour. Spinach tagliatelle works well with lemon, butter or mushrooms. It can handle a bit more sauce, but should not be too heavy.

Pasta d’alba is an organic pasta company founded by the Mainardi family in the hills around Alba, Italy. Alba is a region famous for its truffles, hazelnuts and has a long history of artisan, small-scale food production. The Mainardi family has been farming organically here since the 1980's, long before it was fashionable. The business is now run by three siblings, Luisa, Marco and Laura, who have kept the artisan, hands-on approach while letting modern machinery take care of the repetitive bits.
