Tagliatelle is from northern Italy, it is slightly thicker than tagliolini that we sell and comes in three colours, red, green and orange which is tomato, spinach, and beetroot. It works well with fresh tomato and basil or a simple butter and parmesan topping. Personally we find it is best not to add tomato sauce as this removes the amazing triple colour affect. It can be enjoyed with some of our organic chicken breast to make a light, healthy lunch.

Pasta d’alba is an organic pasta company founded by the Mainardi family in the hills around Alba, Italy. Alba is a region famous for its truffles, hazelnuts and has a long history of artisan, small-scale food production. The Mainardi family has been farming organically here since the 1980's, long before it was fashionable. The business is now run by three siblings, Luisa, Marco and Laura, who have kept the artisan, hands-on approach while letting modern machinery take care of the repetitive bits.
